Rainbow has shown to be proficient at cloud sculpting (I can't find the scene though). I think she has a secretly artsy, creative side that's augmented by her audacity and vision. Someday she'll realize the wonderbolts aren't all that, and she'll start looking for other ways to express herself. Ponyville residents will soon notice at dawn that the pink morning light illuminates a number of huge cloudy figures in the sky: simple shapes like cubes, stars, and hearts; busts of famous ponies; scenes depicting recent events; abstract, mare-made swoops, spirals, and knots of clean, smooth cloudstuff - all scattered across the sky like an open-plan art gallery. She really would make a good artist.

Takes gingerbread house making to a new level by making entire miniature gingerbread cities. Also has a penchant for sorting, cataloging, and organizing files/data as shown in the show where she has meticulous files on ponies in order to plan parties, etc.

You know how Maud has a rock collection? Pinkie has a dildo collection. She has gathered them from all over Equestria. The more zaney and wacky the more she holds them as prized possessions.

Rarity, after entering somepony's home she was invited to, never forgets to ask to go for little Rarity's after a while, but instead of going to the toilet or also sometimes including going to the toilet, she inspects the bedroom of her acquaintance and analyses every little detail. After having visually consumed the room, she goes back downstairs and resumes as normal.
After going back home, she remembers and reimagines all the clues she has taken in and stitches her new friend a brandnew pillow, pardon, cushion to exactly meet their needs, imagined sleeping style, head shape and size, and personal taste. Through her gift of lockpicking, she learned to break open windows without trace - and so she places the cushion onto the bed of the lucky somepony and makes quick work of the old one.
She can always sense that her clandestine work is appreciated and made them have more restful sleep when she stumbles upon her friends again.
