Luna's schizo alter-ego comes from sympathetic circumstances, so there's more intrigue involved in why she sperged out. Celestia's schizo alter-ego comes from 'what if I stopped being nice? what if I'm just evil now? what then, huh?' It's tacked-on, arbitrary, and runs counter to her character up to that point.

If it had been indicated beforehand that she feels that she always knows better, or that she chafes under having to compromise with the ponies beneath her, then it'd make sense for her evil side to crank those theoretical existing character elements up to the maximum. Instead, Daybreaker relies on traits that Celestia not only doesn't have, but is the opposite of. Celestia is set up from the start as a patient, loving ruler who's willing to let her ponies try things out for themselves before offering her perspective. That's the opposite of a big ego. She has about as much in common with Daybreaker as the Mane 6 have in common with their opposite day Discord-touched selves in Return of Harmony.>>42591480Luna was, historically, at least as involved as Celestia was in making Equestria a happy and harmonious place to live, but grew jealous when her work went unrecognised. True, it's not that she was explicitly and inarguably wronged (you could say she just has a flawed, envious character, for example - really, the most sympathetic thing about her is the millennium of solitary confinement) but there's at least some identifiable basis for her going postal that's baked into her character. Can't say the same for Celly.
>>42591722All of that can be explained by a combination of Celestia simply not getting much screen time and her having become a very stable and well-adjusted person over her long lifetime. If Luna spent a thousand years ruling and growing do you think she'd still be at all likely to give in to the urges of NMM? Of course not, she'd have learned to deal with her darker thoughts long ago.
