Taxes in exquestria are quite low and very simple. So they are not stressfull and anoying to pay.
My headcanon is that Euqestrian economy is mostly small businessed like farmers, shopkeepers, bakers, tailors.
Buy most big companies in Equestria (like rail transportation, ship building, power plants) are nationalised. There are very little corporation-tier privat bussinesses. They belong to the princesses, and therefore bring a lot of money straight to the trasury, to be used for free healthcare, help, infrastructure and all that.
Yes, my headcanon is that Equestria in a big part has a socialist economy.
And, due to one simple trick, it might actually work (unlike in human world)
That one simple trick is cutie marks, pony society is a perfect balance thanks to *spmething* (either God, or *harmony*, or whatever else) giving the right cutiemarks to the right ponies. They know what they are good at, and more inportantly they ENJOY what they are good at. Ponies working at fastfood LIKE their job a lot, they like their life, so they are much less likely to feel bad feeling towards ponies who are at higher position and earn more. Some higher force is keeping their world in a near-perfect ballance, to the point of predicting the future maybe, ponies being born are already good at jobs that will be needed in 20+ years...

Similar idea but there are bigger private businesses like Filthy Rich's, but nopony is a jew about it. The bosses pay fair wages, everypony honors their agreements and the money stays invested in the businesses instead of being used to manipulate stock prices

I agree. Equestria is Jew-free so the taxation system is simple, like a universal value-added tax and no other taxes at all.
Certainly no unjust taxes like property tax exist.
Taxes are used for health care and infrastructure where it is needed.
A good portion of the taxes is used for aesthetics, to make the world more beautiful so the general well-being of ponies is greatly increased.

I doubt the Apples are the type to reverse mortgage the farm or take out loans to expand the business

Still, farms take a lot of money to run, even without huge mechanical equipment. Farms are notoriously asset rich, cash poor businesses. They are at the whims of commodity prices.
