Good question. It's not that pony games aren't being made anymore. Consider D'LIRIUM. But I understand, that purely involves OCs and kind of has it's own setting, while Story of the Blanks is... well, it has it's own special charm that comes from the NES style and is directly connected to the show by both characters and location.
I think it might be a good idea to ask our gamejam anons, they're the ones with the interest to work on these kinds of projects, they might have better answers for you. Maybe next year a Nightmare Night gamejam? Talk to them, support them, see what happens.

Barely related and now out of season, but does anyone else remember Shadows Of The Pegasi? Unfinished game from the creator of Dreamy Rainbow, for a while all that was left was this song, before everything was wiped from their channel years ago. As far as I know it's almost extinct media.
