If not, that's a really niche point which the average human wouldn't understand without being told, preferably with some kind of support.

Are you simply nitpicking to fit the tone? If so, there's an issue, where the tone you're using is generally reserved for overly aggressive criticism. That means the fact you're telling this joke implies you should also be making some kind of a point. If not, then that means you've already begun dabbing and doing a touchdown dance over points you've already made, which would make the rest of the lower half of the image make more sense, but that means your justification now rests on the sheer heft of your earlier corrections. If you look like a small fool above, doing a celebratory dance makes you look like a big fool now.

This point comes out to be weak for both sides on its own, in that we can't pin down what she meant or how she meant it enough to say if she's an idiot or not. That means dunking on her, here, is again justified on the assumption of corroborating points.

A midday collar, though results vary, seems to refer not to the knot in front of the sailor, but to the large flat thing draped on their shoulders. The large flat object fluttershy has at the time is the blue butterfly object which functions as a pendant, or really a chest decoration. So, by form, we would assume the midday collar is the butterfly and the shawl lapel is the green ribbon. But, by location, we would assume that the collar is the thin necklace and the shawl lapel is the detailed angular butterfly. If I stretch extra hard and try to FORCE this shit to work, then I would have to assume the butterfly splits open so that fluttershy can walk out of her dress like a tuxedo shirt, which is bonkers. Both these definitions have been stretched beyond their breaking points. However, we can say that rarity is the one who created something which defies easy labeling using human lexicon, which would again mean that fluttershy is gesturing at what she means where the actual language doesn't exist, or else that the collar is actually that blue fucking ribbon on fluttershy's back somehow.

Now here's where you've outright lost the plot. Both you and the OP agree that it's machine stitched. That's not the accusation. You're failing to target and disprove the argument given. The issue is that fluttershy is acting as a critic here, and she is being critiqued for her skill as a critic. When she presents the fact that it is machine stitched as a critique, she presents the idea that this is a problem, a point against the dress in any way. That is the point which fluttershy can be wrong or right about. If we're extra nice to fluttershy, we can say her criticisms aren't demands or expectations, but attempts at objective expression of the quality of the dress. In that case, there's just two relevant questions.
1: Does machine stitching present an aestetic which is perceived as being lower quality in pony society or otherwise mechanically diminish the function or longevity of the dress?
2. Could fluttershy actually tell?

Well, if fluttershy knows her shit, then she could tell, but that's what we're arguing about and that's what we're trying to display with this exact point, meaning that this point is circular. If fluttershy knows her stuff, then she was right here. If she doesn't, then she was wrong and it was maybe and coincidence that rarity really did use a machine stitch.

So, equestria isn't earth. It's not America. It's got mongols and Japanese and a single African. Technologically, it's a mess, and proud of it. Culturally, it's vaguely in the past, most of the time. However, I'll just have you look yourself in the eyes and answer the following question. Do you think equestria is the kind of place which has methods of mass production that started in the 1970's and cheapened articles of high value and extreme artistry via the application of extremely complicated and efficient machine manufacturing, or is it the kind of place where being a skilled artisan meant something?
