Making a character taller instantly increases their appeal in a ton of ways. People would pay way more attention to Applejack if she was tall, and it 100% makes sense for her.

She has a really cute design. If there's one thing I'd say it's that Ashleigh Ball wasn't able to keep the season one voices going and I think girls and boys alike would've much preferred the way she sounded in season one. Also as other people have said many times her episodes are often crummy.

There have been a handful of threads recently in which anons discussed that Applejack has to endure a lot of losses for mistakes made whereas other M6 characters tend to fail upwards or just straight up succeed while making mistakes. The Apples can't even afford to repair their home or get hip surgery for Granny, amongst things, which looks especially poor in comparison with everypony else having seemingly no such worries in their fulfillingly naive little pony lives. The silly Applebonker needed a few more moments to shine.

It's not like a 3d model where you can scale it like that, the 'model' is just a series of bunch of 2d pieces that get fit together to vaguely look like they're a single thing. Your idea either involves stretching all the pieces in which case every single animation breaks because the pieces no longer fit together the way the model expects, or you bake every frame of her and then stretch that vertically in which case her legs would randomly change proportions during her walk cycle.
