As a narrative trope, she's Worf. Played up as extremely strong and wise with her history of defeating Nightmare Moon and ruling for a thousand years, so that when villains are too strong for her or manage to beat her, the audience views them as a credible threat for the protagonists to overcome. However, worth mentioning that in this instance Celestia was using raw power against the literal Power of Love, nothing was going to be a match for Chrysalis in that moment except similar powers because of the whole trope that Love is the strongest.

How many times have we had this thread? I feel like this site is just autistic people making the same threads over and over again because familiar conversations are as comforting as a weighted blanket.

First off, if I recall correctly, it was confirmed alicorns are not immortal. They don't even live forever.
As for "ruler of Equestria", even in the early seasons, there were hints there were limits to her authority, like how she can't cancel the Grand Galloping Gala, even though she doesn't like it.
Now for her power, this was not a problem exclusive to her. In general the show was in a real need of (and I know what I'm about to say might piss off some people) powerscaling: There were many times were there was no tension because we knew nothing about what the characters could or couldn't do, or even if they could be harmed. I'd argue that Discord even had this issue a lot more than Celestia: He’s often portrayed as nigh-omnipotent, with even the alicorns being powerless against him, yet after draining enough ponies Tirek can such him dry, meaning his power is finite and even with that additional magic, he couldn’t beat the power of 4 alicorns and a some nameless magic rock can completely cancel his magic, just like the common magic of unicorns. I guess that the reason her jobbing is more notable than Discord is that at least he gets to show off his strength a lot more, despite the fact that she was in the show since the very start.

Only DBZfags give a shit about exact powerscaling. The only thing that matters here is that Celestia was powerful enough that Chrysalis was surprised she was able to beat her, if Celestia wasn't implied to be powerful "even more powerful than Celestia" would have been an empty statement. It's entirely meant to showcase the power of Shining Armor's love for Cadence, not for internet autists to argue about power level rankings.
