What exactly are the politics regims in place in Equestria ?
Some have claimed there's monarchical elements mixed with fascism so my question is, which one is it?

I mean, depending on whether you still hold that "Celestia is pony God", then I'd say it's somewhere between a theocracy and a benevolent monarchy, a holy ponish empire of sorts, dose that suggest a Charle-mane?

But I have no issue with instating pony fascism either; Aryanne is the best pony.

Sprout deserved better, he just became some strawman by the end. Dude led the fight in the movie, just to do a 180 and be a spineless coward for every possible other scene throughout the show. Could have given up the factory, but instead just states it's still his while Hichbitch just effectively ceases it for him and his friends. Squatter's rights, I suppose? They could have at least done a trick with him, semi-reformed, with some sign he's trying to improve, maybe get with Mare, who still liked the old ways, or join in that final fight against Opeline for old times' sake. But no, you see the shittyG5 writing and missed opportunities like that, which make people hate Hasjew.

It is basically Dark Souls/Elden ring but with ponies and before everything goes to shit, with Celestia being the Lord Gwyn/Marika equivalent.

I like to believe the post-opaline era was pretty much the dark souls/post shattering era of FiM’s world

Well we need to analyze this carefully because depending on how you understanding the concept of godhood that might change the answer.

The western definition of "god" is a lot different from old, pre-Christian and non-Christian cultures. Our modern, western understanding of God comes from Exodus 3:14, where God tells Moses "I am what I am". God said that because in Ancient Egypt, gods were always attached to a physical manifestation of their power, Ra, the most worshipped Egyptian god, was the god of the sun, so if the sun was gone, is Ra gone? And this goes on for every single other god in every single other culture. So God shows himself to Moses saying "I am" because whether there's sun or not, whether there's life or not, whether the universe, reality, time or not, He still is, because God is so sovereign over everything, both physical or not.

So that's our understanding of what it means to be "God", so how does Equestrian culture view the definition of "God"? Well that is up to speculation, but they could have a similar system to the Ancient Egyptian one, where the Pharaoh was also a god, and considered the most connected to the divine pantheon. In no culture was a single, living thing considered the supreme sovereign of the pantheon, and thus Earth, but being a living god, like a Pharaoh, still afforded you a life of being worshipped.

So, the real test, do ponies worship Celestia? They do bow before her when she enters, but as the show went on the mystique of her character faded away to give place to this sort-of "Benevolent ruler" personality, that while true to her, is also just a version of Celestia with a lot less nuance.

I'm not sure whre the Fascism idea comes from. Canon has next to no information relating to Equestria's economic policies, so it's impossible to determine the level of state control or private cooperation with state policy. On the racial side, the government must maintain racial harmony among the pony subspecies/tribes or a literal magical apocalypse will sweep over the country and kill everyone. I suppose you could argue Celestia/the alicorns have a cult of personality of sorts, but they're immortal, actual ubermench who stabilized the country after its formation and effectively set the country's morality. It's going to be hard not to have a cult of personality.
