I think I like the electric versions a little better.
Bruce isn't good enough at folk melodies like say Nick Drake or even Jimmy page, to make acoustic very musically interesting on its own.
Fleshing it out a little with bass and drums helps.

So 1.) I think he did the all original demo tape release for a good PR story.
And 2.) for band politics. Most of electric Nebraska just used bass and drums, so other band members had no job. so they probably agreed to do that one person demo Nebraska if the next album was a full band one like Born in USA was.
