it depends what "testing" speakers/headphones/any other audio gear means to you, ie what youre trying to get out of it. what I mean is, if youre trying to get stuff to sound as good as possible, like you would if you were demonstrating equipment to a potential customer in a shop, thats one thing. if youre trying to genuinely test the limits of your system and find out what its weak points are, youd use something completely different.
the former is easy, you need stuff with a detailed but smooth top end (the smoothness is more important than ultimate levels of detail which can provoke poor tweeters into sibilance or harshness), you want discrete and tightly controlled bass notes, natural recording of instruments and particularly the human voice, and most importantly you want as much space and air in the mix as possible. a good example from pop music is Kate Bush - The Kick Inside. some part of the replay chain has to be seriously fucked up for that album to sound bad.

the latter is trickier because you need to test the music on various kit to find out if its just a bad recording, or if its challenging to reproduce and therefore a genuine test for equipment. electronic music can be good here especially in the bass, the deep extension and long duration of some bass tones together with how they can change instantly from one note to another is challenging to reproduce without sounding muddy or flabby, especially for small speakers, and the purity of synthesised tones can also make colourations (noticeable dips/peaks in freq. response) more obvious. an example, Future Sound of London - Lifeforms, on a good system the scale of this really pops and the sound opens out into a wide soundstage but on a poor system it can sound confused and indistinct. grand orchestral works are good to see how much detail can still be resolved when theres a ton of stuff going on at once, and solo piano is notoriously tricky because its difficult to record and reproduce perfectly in the first place but also because piano geeks are some of the most awkward, picky and plain autistic fucktards you will ever meet.
