As for the sound itself, id do it with a resonating filter (ie minimoog) turned to oscillation and linked to the keyboard voltage control, sort of lingering/long decay, and most importantly, a bit of portamento so the pitch slides instead of sharply change. Thats the recipe. Will work with plugins no problem.
