I suppose I understand: you can create great music without a working knowledge of theory, and to do so must feel like alchemy, and so to have someone explain as if it were a chemistry experiment feels sacrosanct. I'm sure these same people wouldn't feel as opposed to say, using a recipe when cooking, though I suspect they may feel more romantically interested in the idea of improvisation. Ultimately, it is authority which they (seek to) reject. It feels a little low IQ to me but if it makes better music I guess I can live with that.

Mapping everything you are doing in musical language either by letters or notes will always be the high IQ way to approach music. I didn't made the sounds of the universe but they can be mapped, once mapped you can get a physical sense of what fits what usually or even how to subvert expectations tastefully.
