You are getting confused with melody + accompaniment. Which yeah it can sound similar to a polyphony but thats not what OP means. The Mashup example is perfect, its all the instruemnts of a song + all the instruments of another song and they you make them "fit" together. It is hard to do because essentially you have to make 2 songs that fit together then fuse them.
You need to be somewhat of a music theory nerd to pull it off. Or play in the same key and get lucky with what you did.

As seen most music today is Homophony. Being able to point out that it is not monophony does not prove it's polyphony. Even with harmonizing points there is still a clear, singular, leading melody in pop music
