They are simply smart, high IQ so they can appreciate high IQ genres.Go to any Conservatorium of Music its mostly Asians, Hafus and some white dudes here and there. But most of classical is getting dominated by Azns and that is simply because they have good taste and care to conserve the old knowledge more than white European ancestry people do these days. It's literally just that. They heard classical, jazz and prog and went like yep that has a ton of melodic potential I'm going to make my own. And they did. Very successfully. Even better than us nowadays actually.
