The US constitution only stipulates that someone can be elected for two years. But if Trump is VP, and the current president steps down, he's technically not elected but appointed via succession. So does that mean Trump can be president?

yeah no. Current estimate is 2 million files that are unreleased. Not to mention you haven't addressed how the law specifically states the only names to be redacted are victims, yet there are CONSTANT redactions of people who are obviously coconspirators. Including at least one of them showing they intentionally censor Trump's own name because one of Epstein's emails involved someone sending him a CNN article on Trump that got Trump's name in the title censored.
