In my state, I cannot Fence off the easement or block it with a solid wall. I can put plants on it such as a flower bed or lawn but if I do so, then I am obligated to maintain it or remove it. If I remove it, I must return the land to native vegetation.I also occupy a curved curbless corner like you do. My solution was to put up a decorative 2 foot tall narrow hedge and keep it trimmed. That has stopped cars from shortcutting across the property.
