I’m aware cars nowadays are mostly plastic leasebait, but still, if you were to buy a fairly recent, fun car with the intention of keeping it for a long time, what would you buy and why?

I don't think any modern (post 2010) cars are 'long time' cars. I know it's cliche, but they don't make them like they used to. Not because the car manufacturers are dumber, but because governments are. All the emissions regulations, with all the bullshit they need to attach to engines now, mean even Toyota will never build another '2 million mile Corolla' in present day.
My advice? Find a non-molested classic (doesn't even need to be that 'classic', just something before the world went mad) and learn how to keep it running, and stock up on the wear and tear maintenance items (clutch, rotors, pads, pumps).

Alfa Romeo Giulia. But even that has some plastic shit parts. Luckily you can upgrade the radiator and fix some of that.
Maybe a Jaguar XK for a cruiser, but I think I’d prefer a lexus lc500 desu. Either seem solid for long-term use.

Enthusiast cars that have built a legacy, such as the Miata, Corvette, Mustang, and maybe some Porsches*. I'm willing to bet 50 years from now, you will still see various C8 Vettes like how we still see C2 and C3s today.

I own 2 cars from 20+ years ago because they don't make them like they used to, and plan on keeping them for as long as I can keep them working. My next vehicle? Another 20+ year old vehicle. Either an imported UD Condor or a Jeep Comanche.

Pic unrelated I'm guess? Have you seen the bullshit a 15 year old BMW will put you through? E90s need their entire cooling system gone through the second you buy them. The expansion tanks and radiators are known to rupture, the hoses leak, the water pumps fail. They have stereo problems and cabin leak issues. If they're this bad at 15 years old how do you think they're going to fare at 30? E30s lasted because they're dead simple and well built and many of them were still killed by neglect because they have timing belts and heads that crack if you overheat them once. Modern cars are extremely complicated and integrated, all sorts of modules and shit to go bad and cause problems in other areas. Cooling systems made 100% of plastic from the water pumps to the fittings, plastic oil pans, CVTs, all stuff that will probably cause issues on a "forever" time scale.

Base model Bronco with the 4cylinder automatic. It's going to have a huge aftermarket, the engine is in everything, and it's not a stick so you won't get deadlines hunting dick shift parts that had a 2% take rate to redditors 20 years down the road.

4x4 ensures the vehicle will have novel use in a world of ever increasing performance benchmarks. They don't "age out" of being fun by becoming slow af like all sports cars inevitably do.

Trucks of fleet spec fall into the same category.

My E90 316i(which is almost 20yo) has had no such issues. Biggest issues were oil burning(which was a 350 Euroshekel fix) and worn suspension components which I have tackled a little already.
Maybe it's a Made in Mexico and Made in Deutchland difference?

Arguably Subaru's. They haven't changed shit in 30 years and I see just as many 20-30 year old Subarus in my area as equal age Chevy's, Toyotas and Hondas. What they have changed is mostly aesthetic, and Subaru re uses so many parts in their designs that you'll pretty much always be able to find stuff to fix them. They also handle nice and are enjoyable to drive.

Is it possible to take a car and turn it into a "dumb" car? Remove all the tech yet still have it working? I kinda wanna get a nu-WRX, drive it until the engine has issues, then LS swap it or put an otherwise reliable engine in it. Can't you just take all the tech out of it at that point and have it just run as a dumb car? All you need is the wheels spinning no?

Also clearly I may not have the required knowledge to swap an engine, I'd have to pay someone to do it. Is that something that's even economically viable?

If you have to ask this, the answer is "no" for you. It's both beyond your technical abilities, and by the look of it, beyond your budget (since you want a WRX instead of something better).

Every single little thing is on a network, integrated by modules, in a modern car. The power windows are controlled by a module, the lights are controlled by a module, the stereo is integrated on the network with other modules. Yes, you could de-modernize a car and throw all of the fucking modules away and put everything on switches and relays like it was until the 2000s, but it's an immense amount of work. Even engine swapping is a pain in the dick these days if you want to do simple stuff like retain the OEM gauge cluster instead of some ricer digi dash screen that looks a toy, which is why nearly every swapped modern car you see has one of those shitty looking AEM/haltech/whatever screens where the stock cluster used to live. To integrate you have to break into and reverse engineer OE systems, and that's difficult (DIY) or expensive (paying someone else)

You can run a 25' WRX off a speeduino or equivalent homebrew controller. The manual ones are still relatively simple(you're probably not skillfull enough to doom it but still it's an option if you want to learn)The CVT ones with eyesight should be avoided though as they have extra modules in them that would also need to be reprogrammed/ replicated/ relaced.
