They can adjust it to basically whatever they want to make a 6 piston clamp "as hard" as a 10 piston setup. And generally they don't want extremely sensitive brakes because it's harder for brake modulation. They do it for more even clamping which spreads the heat out better on the pad, more even heat dissipation into the brake fluid in the brake pistons, and more surface area for cooling. Tldr: it's not done for clamping it's done for cooling and heat dissipation reasons.
