What would be the simplest way to fly away and out of sight from a cop during a traffic stop, or at least simulate flying away? It's something I've fantasized about doing ever since I was a kid.

I suggest investing in a decent helicopter, it is a bit hard to take off on the spot in an airplane. My recommendation is a Bell 206 Jet Ranger.

Break line of sight and pull off the road. I got away from a cop once. I passed him on the side of the road speeding and saw him pull out knowing he was going to come after me; but I knew the road so I kept up my speed, crested a hill and broke line of sight then immediately pulled up into a driveway and parked. Watched the cop fly past me in my rear view mirror then I waited a few minutes pulled out of the driveway and continued on my way. Drove past the cop later down the road driving back to where he'd been; but I was going the speed limit at that point and since he hadn't gotten behind me to see my license plate there was nothing he could do.

Once they have your license plate your fucked though. Unless you're driving a stolen car, have something super illegal in the car or you're wanted for something way worse than speeding and evading the police then you should just take the fucking ticket since they'll just track you down with your license plate even if you get away.

your going to need a convertible or T top car / very generous moon roof.
jet packs are starting to become more viable, or you could use an ejection seat to launch a Yves Rossy style jetwingpack.

ok.. set up a hidden compartment inside of the car from which you can use CAN and LIN bus features to remotely pilot the car.
then have a very detailed helium balloon statue of your self sitting in the drivers seat.
at the opportune moment your body double statue will float away, while you use the distraction to walk away un noticed.
