I managed with one stuck closed for like 2 weeks just by always driving fast enough to keep the engine cool from air blowing over it. Of course that engine started knocking and blew up 10000 miles later which being unnecessarily exposed to high temperature might have contributed to.

Engine never gets to mean operational temps, heater is "warm" but not "hot" , especially noticeable in cold weather.
Plugs show rich . Exhaust smells rich.

No, hotter is better. An ideal theoretical engine is infinitely hot when it combusts and loses none of that heat out of the chambers.
But in the real world we have thermal transfer and such.
As hot as it can get with respect to the fluid limits is good for combustion (and oil film friction) i.e. not only better torque also better economy. But again, within limits.

Higher temperatures mean fluids flow better. People wrap turbos and exhaust headers/pipes with insulation to improve system efficiency. The maximum temp limit is when system component reliability starts going down. You yourself can probably get 0.5% better MPG if you wrap your entire exhaust in insulation.

Cold start the car and keep your hand on the upper rad hose. It should stay cold until the t-stat opens up. If it gets warm right away it's stuck open.

Sticking closed used to be the main failure they had but in the last 15 years or so they've been sticking open most often which says something changed but I don't know what.

With modern cooling systems, even with an open/missing thermostat, it will take a while to get any sense of split, as a lot of cooling systems are set up to prioritize self heating, then heater core, then radiator.
I'd say "within ten to fifteen minutes".

Otherwise, your suggestion works fine on older/simpler vehicles.
Just don't expect immediate results. Give the mill a few minutes.

Any cooling system made in the past 40 years is going to operate the same. Obviously this isn't going to be an instant event as it takes a lot of heat to heat soak the engine enough to pop the t-stat open.
