Hell/o/ I want to commission a buisness to restore my ride that's riddled with rust. Which service should I consider and why? Is there a particular reason to choose one over the other? Is one less expensive than the other? If so is there an objective downside to the lesser expensive service?

If youre talking about a chassis or other large pieces (doors, engine block etc), its not going to happen. Not just the cost but also the size.
You want media blasting.
Sand blasting is the most common but can cause excess heat and warping (rare but happens).
Baking soda is also used. Takes more time but causes less potential damage.

In my area a couple of years ago I was unable to find a dry ice blasting service for what I needed.
After investigating a bit further it has fairly significant capex requirements along with ongoing opex and consumables compared to laser.
For what I needed, laser seemed comparatively aggressive and seemed to leave more marks on the parts but it really depends on what youre trying to do. depending on the scope of work you can probably buy a laser cheaper than paying some other retard to do it for you.
