I am struggling to understand why anyone would ever buy one?

Why anyone would take the 4cylinder ingenium engine over the V6 or V8, it's pointless. If you want a 4cylinder sports car, get an MX5/Abarth 124 or an Elise.

ToBH, it would be goated with a turbo-I5 and a manual, or a downsized 3.0L V8 for non-US markets. With modern tech, 5L is just too powerful unless you have access to a race track, and adding pigfat on the car just to tame the surplus power is frankly stupid.

What are the other burger brands offering such as cadillac, lincoln etc. i know there's also a 2 litre Camero but that feels like the same thing as the mustang to me. V8 or go home.

Mustang has never been a sportscar.
It debuted with a base model 170c.i. I6 with 105bhp.
Fox body 5.0 V8s were 205-225hp, supra I6s were putting down the same HP at the time.
2015 naturally aspirated V6s were 305hp
The current 2.3L ecoboost is 310hp.
The '83/'84 Turbo GT was a 2.3L, same with the "84-'86 SVOs.
