It seems like everything is off-the-wall Aliexpress shit and I don't want to trust my car or my life to some bullshit mystery meat jacks and jack stands.

What is an actual trustworthy brand with a reputation they care about in the jack stand world?

Just looking for a basic jack and jack stands for now that can work with a low profile vehicle (not crazy low) with a body kit and can properly lift it from the pinch welds without fucking them up.

Long term I want to get a mid-rise lift or something, but that's for another thread.

Doesn't matter, Harbor Freight is fine. Make it a Daytona if you want something half decent.
Stands are what should be important. I've been suing ESCO stands for years at this point, and I'd recommend these or similar over those chintzy "standard" types. They've got much more stable feet, a large, stable pad and are typically rated for 3 tons EACH, not by pair, so they'll work even on a full size trugg or SUV with no issue.
If you've got some shitbox with pinch welds you just get a specific pad for that.

i have actually moved my car while it was on stands doing this. It wasn't much, but I noticed that the car had actually moved about a centimetre from where I had initially put the stand while I was wailing on the upper ball joint with a very long cheater bar

Unless you had three of these wheeled jacks under your car, sure, but they would still be supporting the entirety of the vehicle despite the movement.
Having said that, "Give me a lever long enough and a fulcrum on which to place it, and I shall move the world" is also a thing. Set your jack stands too high and suddenly you've got delicious cascade pancakes.

They're obviously aren't tested to three tons - chinkshit doesn't ever have real ratings, but they're heavy enough to work on any car or truck and these models come with the flared footpads and higher lift that the 2-ton models don't, for another twenty-odd bucks. They also have the U-shaped ends.

probably more important to inspect the welds on the ones you buy more than the brand. also, always have a failsafe like spare wheels under the car incase it falls. I'll never trust just being under jackstands, don't care how reputable the brand.

Why the fuck does everyone that works on a car always seem to have spare wheels and piles of wood, etc? Nigga, I don't have any of that shit. I have the wheels I have on the car and I have zero wood that isn't built into something. What is the best kind of jack to use with side skirts that go way below the pinch weld? I feel like most jacks would collide with the skirt and crack it. Is it just a matter of using one of those extension pucks? Or do you really just need to 4 point lift it with something like quick jacks or a full lift and nothing else will work?

hopefully if you're on level ground you can get a low profile floor jack and lift it by the front or rear crossmember, or diff housing.

Buy the most monstrous low profile jack you can find, made for like commercial trucks or SUV's or some shit. I have some $360 made in the US monstrosity in my garage for my BRZ.
For Jackstands, get the beefiest shit you can find, I have some NORCO 6 or 8 ton jackstands I forget. After you have the car lifted, take off the wheels and also place them under spots on the car in case the stands fail, the car lands on the wheels instead. Now you're set to not die an embarrassing death and wrench where you need to.

Is there not a jack attachment that is designed for low skirts? I've seen some that look like hockey pucks but are actually attached to the jack and not just resting.

The car isn't crazy low, it's like 6 or 7 inches (because fuck scraping), but there is that 2-3" drop from the side skirts to get to the pinch weld and I'd need a jack that doesn't damage the skirt. I know the crossmember is an option, but I always worry about bending that shit or having it slip because it's not a "locked in" point like a pinch weld. I might just have to get a lift of some kind, jacks and jack stands are for crossover drivers.

honestly i dunno, i've always just made go with hockey pucks, they're cheap and they last a fair number of lifts before needing to be totally replaced.
the crossmember should be part of the subframe, usually the center of it is more than adequate for lifting, in fact your owner's (or factory service) manual might show it as one of the suitable jacking points

Is the Daytona actually decent?

I went and bought a 3 ton pittsburgh for $150 today (not OP) and it is near impossible to get it to descend slowly (I'm working on a little 99 corolla). Always scares the shit out of me.

yes they're solid, every independent tire shop I've been to have at least a few daytona jacks. try bleeding your jack. I've got a Pittsburgh low profile and I can lower my car by a few millimeters if I wanted to with just a slight turn of the handle.
