A lot, actually.
The National Blue Trail is the oldest long-distance route in Europe and takes you through the most scenic parts of the country (Pilis, Danube Bend, Upper Balaton, Bükk, Zemplén, etc), passing by many historic villages, forests, caves and castles. It's part of the Blue Circle, which is a hike route around the country.
The infrastructure is also very good, with proper markings, trail maintenance, stamps and an official book to prove you've completed the trail, by collecting all the stamps. It's basically an Appalachian Trail lite.
The north has a lot of forests and hidden gems, more experienced hikers actually dislike the blue trail sometimes, since it avoids quite a few nice paths and areas.
But it all comes down to preferences. If coniferous forests and rocky mountaintops are your thing, then the country would be a disappointment for you.

Most European countries parts will be between C and E if you desire more than hiking in a nice cultural landscapes such as abundant interesting wildlife, the right to roam, free camping and easily accessible hunting and fishing then you will have few attractive countries. No European country has it all but usually there are a couple of excellent spots and possibilities to enjoy the outdoors. The again how many US-states have it all? Maybe 6?

Norway is a B in my opinion: it has great landscapes and offers a lot of freedom but has very little wildlife that can be spotted outdoors besides seabirds and it has little variety in flora. It's like an early Minecraft version world. Fishing is great, Small game hunting is really good, big game hunting is mediocre.
