I'm chosing places to travel in order to do some sort of hiking trip, and initially in I'm between Belgium, Germany, Canada and Norway....

Belgium is nice for cycling but really boring for hiking. Germany and France have much better trails, it's not even close. Spain too.

Over a quarter of Germany is protected land. As has been said elsewhere you might find a lot of family farms and simple hiking trails in those spots but thereā€˜s a wild array of distinct environments in varying skill levels.
