Just thumbing through the Wikipedia article real quick, my best guess is hypothermia + panic/lost person behavior + animals got to the soft tissues.
Some key factors, looks like they were up against extreme temperatures that they maybe weren't anticipating, there was a ~60 day delay between their disappearance, and they were at very low elevation so they didn't experience any altitude-related issues.

Didn't see anything about surgical removal of their soft tissues, just saw that it was noted "they were missing" which is what I'd expect from a corpse left in the woods for two months. Didn't see anything about radiation either, but if that's true I'd attribute that to Soviet retardation. Soviets clearly never gave a shit about radiation safety. It's pretty rare for you to get naturally irradiated to the point of it being a health concern, usually it's directly caused by human and human stupidity. Give the Soviet track record with radiation incidents, I'm going to take a wild guess and say that somehow Soviet carelessness with radioactive materials was to blame for that.

As for radiation, it is proposed that one of the guys worked at a factory that handled radioactive material. It was neither the first or secondary cause of the incident but the byproduct of the working conditions of his time (Za rodinu!).

You can see from the image above, there was no avalanche. The tent site was largely intact and uncovered. Also some of the tourists were found with multiple broken ribs. They would not have been able to walk 2km with those injuries, then build a fire, build a shelter, cut up and divide the dead's clothes, etc.
