Because its what people wanted when switching from film to digital.And why older digital sensors are said to have been designed for more saturated colors. People now describe these as "film like", but what they really were made to do was cater to this desire for more saturated colors than film. The genuinely film-like thing about CCDs is being like *slide* film in being more saturated than negative film, and also blowing out the highlights to pure white like slide (but not negative) film.
