There’s a couple methods, one is you look for orbital wobbling, a particularly massive planet will tug on their star and cause it to shift, you can then use that to determine its radial velocity thanks to the Doppler effect. You can look for transits, that is when the planet passes in front of their star. This allows us to determine radius, and we can determine its composition with spectography, different elements produce different spectrums of light. If you catch a transit and detect wobble you can fairly accurately determine mass. It’s not a perfect system though, but as a ballpark estimate it’s fairly reliable.

There are tons of objects out there that are absolutely impossible to 'see' because they don't emit light wavelengths that the human eye can detect.
I guess it's hard to 'see' them according to that narrow definition but they are sure as shit easy to detect because they vomit x-rays or some other wavelength.
Just like it may be hard to 'see' an exoplanet but it is very easy to figure out that they are there now that we know what to look for.

Im not going to act like i know what this crap means but to my very limited understanding the calculate mass by how gravity makes this objects move or something like that.
If an object is bigger it obviously has more gravity so rotations can vary, like on those old fountain things where you dropped coins to donate to hospitals, bigger coins spinner faster so im assuming something similar happens with celestial objects, even though they have a very big rotation around it sun they probably move a lot faster than earth.
