I had a salmon nicoise at a fancy French place near me. It was really good but thought it lacked any distinct flavor that made it stand out from any other salmon I had. Authentic French onion soup is the shit though.

I think it's china in all honesty. they're the only ones to have figured out that you're supposed to balance sweet and sour flavours, instead of just sour and salty. I use the same principle in my cooking. italian food seems really infantile in comparison. no flavour balance. only sour tomato flavour, no sweetness to balance it out. like babbie's first dish

Because the French don't really have a cuisine they're proud of. All the iconic dishes like pot-au-feu or boeuf bourguignon are not at all what the average French eats every day. The Italians eat pasta and pizza every day, the Japanese eat rice and pickled vegetables and fish every day, etc. whereas the French don't even eat French food on a regular basis unless you consider a jambon-beurre (literally just ham and butter in a baguette) to be the peak of French "cuisine"
