Did they not see this massive changing of the balance in society as affecting how that society operated?

These were the plantation owners and elite businessmen of the South who affected airs of European refinement. Most of their men died in the civil war and their holdings were liquidated afterwards. Some traces of their ways still remain, like the old "Southern hospitality" meme and the importance of manners in some places. But the common folk of the South were always heavily scots-irish influenced, with a pride-based honour culture that only became more deeply ingrained once they got their asses kicked. Look at Dublin or Glasgow today. Watch Trainspotting or Brad Pitt's pikey gang in Snatch. The accents are different but the mindset is the same.
