So people would have been using the islands as a base for further exploration of the Atlantic. It's also possible that in the generations after that people from Portugal and Spain combed English and Scandinavian records for all information on Atlantic exploration.

Map makers would add land that they know little about. They would also sometimes even add land that they just thought might be there. They didn't know Antarctica existed, but they assumed that the world needed land on the south to counteract the land in the north so maps often showed what they called Terra Australis (southern land). When the continent of Australia was found they used that term for it, then a few years later they discovered Antarctica lol.
