It's actually not trivial to fake out localization, and you're using their HW so you won't be able to do anything on that side. If they have access to what your WiFi is seeing around you - "manage WiFi connections" on Windows - if you're in an urban area, all that's compiled they'll know where you are to a couple of meters.
Also, a hotspot is providing you with a local WiFi connection - the cellular connection will be localized. All the VPNing doesn't change that you're making a connection through the cell network at that location on a specific tower.
You're not really anonymous in any way these days if you give the wrong people a reason to give a fuck about you.

You bet. Location based tracking is a bitch and is easy to circumnavigate if the company hasn't done their shit or you know your shit.

Ideally you want to enable Geo-IP based tracking, WiFi tracking, running an EDR on workstation, MDM on their work-phone and even an persistent firmware embedded in the BIOS to allow for tracking AND correlation to detect anomalies in a UBA (User Behavior Analytics) tool or an Insider Risk Management tool. For most companies this is just a hassle and the ones they caught are the retards.

One time my coworker and I were driving around East Fuck-ass Iowa starving and happened upon a cool little diner and had an absolutely massive and incredible hamburger.

Besides, in some companies they don't even need to be there the whole day, just doing a check-in it's enough and you can go back to your house to work there the rest of the day.
