You can make a fair amount of educated guesses on how these animals looked.
You can both compare the bone steuctures to currently living animals, and also observe things such as muscle attatchment points and all that. And through the study of biomechanics you can make comments on how they moved, and from that you could make points about behaviour.
For example, with terror birds you can guess that they killed their prey by pecking it with the point of tha beak, rather than shake it from side to side. Because the force is would be too much for the later, and more efficient for the former.
