I sometimes cure and smoke meats, mostly ham and bacon but I skip the fermentation phase.
Does it actually influence the texture and flavour too much compared to not doing it?
Feel like this climate is not ideal for any kind of meat fermentation without it turning toxic so I just dry cure them or just brine cure them from cold for a little more than a week and then they go straight to the smoker for some hot smoking until it reaches cooked temp.

The trick is the stable temperature. If you have the space for pigs goats are also good. Just separate the males from the females outside of breeding so the smell doesn't rub off on them. That way you can also get milk. Goat cheese is incredible and super easy to make. Goats and pigs work together as natural land cleaners. Goats remove brush above ground. Pigs dig out the roots and tubers. This is why they can naturally counter Kudzu. They completely dig the stuff up and eat it.

I would still suggest trying out an ancient grain instead. Their much easier to handle, process, and much tougher. Wheat requires too much work.

A local restaurant had prime venison on the menu when I took my wife out for our anniversary. I kill and process my own, but it was the best deer meat I ever had. I got take away plates to bring home to the kids it was so good.

it is super easy. Luckily my kid loves cleaning them. I don't care for deer meat aged in a fridge/freezer. I keep it in a cooler full of ice for 7-10 days. Just don't let it sit in the water. You have to keep it drained. Same with pigs but don't go more than 3-4 maybe 5 days. Pork will turn on you quick in a cooler. I've never tasted "gamey" meat I've processed myself.

You can get them cheaper. I've got 2 and a grill that I can easily move from the boats to the patio table. It mounts in a rod holder so I put rod holders in the picnic table. Its pretty sweet but doesn't have great temp control. I made the best shish kabobs on it at the Blue Angels homecoming show in Little Sabin Bay though. Smoking on the other 2 is fun. I've bragged that the best meal ever cooked in a 10 mile radius came off my smoker. It was snapper fresh out of the Gulf that day. Can throw a boston butt on it in the morning, fish all day and come home to a meal. Just let it rest while we wash the boat.
