How does stealing Ukraine's territory help Russia in any meaningful way?

Russia's narrative is that they are fighting an "existential threat" but that is obviously nonsense. Finland joined NATO during the war and they share a large land border with Russia. NATO missiles are now being stored within 500km of St Petersburg.

Some might claim it's to steal Ukraine's natural gas deposits, but Russia lacks the technology in place to adequately exploit it. Not to mention they are severely lacking in funding right now having spent most of their savings on war supplies. They would basically be relying on massive-scale investment from China and India, but what reason would they have to do this? They already get more than enough supply from Russia as it is. Not to mention sanctions make the job significantly more difficult.

So what exactly is the endgame? Russia isn't going to be anywhere near as rich after the war as they were 5 years ago, and with the European market becoming increasingly disconnected, it will be impossible to reach those levels again. On top of that, with so little investment coming in and all of the soldiers returning to the civilian sector, Russia is almost certain to experience stagflation. Whatever land their steal from the Ukrainians will not be able to prevent this. They will likely have to start another war to keep the wartime economy running. I know a lot of people like to say America "doesn't need Europe", but Russia sort of does if they want a strong economy. This is one of the reasons they have been seething at Europe so much.

No, the initial plan was to occupy the whole Ukraine and subordinate it to Moscow. Turn it into a Belarus under occupation. They really thought the Russian army was so superior they could do it with a blitzkrieg. Then it all failed miserably and they got stuck in this way. And then Putin was forced to redefine the goals as something much more modest he could still present as a victory of sorts and use whatever reasons to justify it.
But strategically it's an own goal.
They failed to stop NATO expansion to Russia's borders.
They failed to occupy and control Ukraine.
And instead of having a puppet government in Kiev, now Ukraine will get integrated in the EU in some form.
So overall Russia spent its whole fortune on just a strip of land at the sea and they will advertise that as a massive victory with incredible significance. When it's more like a cope for a failure to complete the original plan.
