Arming them does not automatically change their status, but they can lose their protection from military attack in a time of war if they engage in belligerent acts or become auxiliaries to an enemy's armed forces.Considering freighters aren't meant to be warships they just become slow moving easy targets for long range missiles and aircraft. They would also take on water uncontrollably and sink at the first good hit because they lack separating internal bulkheads to seal off flooded areas.
