Catholicism to me is the most beautiful thing possible. When people ask me what I am, I don't say Republican, Democrat, or even American, I am a CATHOLIC, I am a member of the Royal Family of the Kingdom of God. If you actually read about Catholicism it will change the way you look at life forever.

The Roman Catholic Church’s idea that Peter was the first bishop of Rome is ahistorical and a latter legendary development to legitimize itself.

Analysis of Paul’s epistle to the Romans will even contradict this: Read it and try to see if you can even see any evidence of church hierarchy à la Rome or a nod to Peter’s authority or presence.

Also read up on the history and source of the succession list of bishops of Rome. Or the pentarchate and early council structure of the church. No Roman supremacy to be seen besides imperial and political deference

I am a catholic, but I'm a shut-in since I got fired a few months ago (I was doing the Lord's Work, working in direct patient care at a hospital, regularly working sundays and generally being too exhausted to get up in time for Mass on the days I wasnt working) and I haven't been to confession or mass in over a year. I've thought about pursuing religion. But between protestantism, Catholicism and Orthodoxy, the catholic church seems like the option that makes the least sense.
If you believe that Jesus, when he said that the gates of Hell will not prevail against the Church, meant that the actual institution he founded would never fall into heresy, or if you believe that apostolic succession and Church tradition are necessary to understand or even justify scripture then why wouldn't you pick Orthodoxy over Catholicism? The idea of papal supremacy seems like a blatant accretion, and the more decentralised power structure of the Orthodox Church shields it from much of the criticism that the Catholic Church is exposed to. It's kinda hard to buy into Catholicism when the history of the papacy is filled with so much blatant corruption and abuse of power.
And if you think Jesus was referring not to a specific institution but rather just the continuation of worship and faith in Him, the practice of His teachings and the spreading of the gospel, and if you look at the history of the Catholic (and Orthodox) Church and are justifiably uncomfortable with vesting any spiritual authority in these institutions then protestantism is the obvious answer for you.

That's a big claim that not even the Catholic Church itself would make.
There have been many doctrinal developments over the course of Church history. The Catholic Church acknowledges this, but claims that these doctrinal developments have been made with the authority of the Church.
So the question is whether or not you think that doctrinal developments are immune from the bad leadership and human folly that is evident in other aspects of Church history, and if yes then what your basis for this belief is.

Quick example, if I live unwedded with a woman (no sacrament of matrimony) according to the church I am in sin and can’t receive communion. If I die in this state I’m not looking too good.

Now dude, google what year marriage officially became a sacrament in the church. There’s your “unchanged dogma”. It was only after the Protestant reform. Did you know Catholic Spaniards for example had a Spanish wife in Spain and a native convert indigenous wife in the Americas and they would still be in good standing with the church because the church didn’t still officiate marriage ceremonies?

Even if you weren't raised religious, Christianity is the religion of your ancestors and your nation. The flag of your nation bears the cross of St. George, the saltire of St. Andrew, and the saltire of St. Patrick, three great Christian saints. Even if you do not yet believe you should interact with the culture and find something true in it.

Presupposes that there's only your religion and no religion. When we actually take it into reality, then it's no longer something that works.
Then when you also include other god concepts, like the Evil God, where you're punished with Hell for following any religion, and rewarded with Heaven for not following a religion, just to fuck with people. Once the Evil God is included, then you can't even be certain that making a choice of any religion is better than not.
