We actually do see everything upside-down and mirrored, it's just that our brains also rotate the image our eyes send them. The rays in that image are basically all coming from the same spot. Imagine something like looking at a a star in the night sky. Because of the incorrect refraction, instead of a bright point light, it ends up becoming a blurry spot of light. It doesn't really matter if it's upside-down or not, it'll look the same. The error is enough to make that one light look blurry but not enough to flip the image.
