Because matter is naturally attracted to each other down to the very matter-anti-matter particle pairs that spawn in our quantum soup, that force might not be well-defined but we know enough to start looking for its source. We don't actually know for sure yet; "Gravitons" are just one plausible hypothesis among the few good ones.

Then we'd have already found it by now. We can watch photons get exchanged by electrons (or at least calculate it) and watch atoms split apart but we can't find the fundamental particle that permeates throughout all of spacetime?
If intergalactic space has 1 particle/m^3 and gravity is acting upon it via the particle in the next cubic meter over, where's the "graviton"? Even when acting below lightspeed there's still no change in which particles or how much "mass" is in these side-by-side cubic meters. Gravity acts upon just about every single object in the universe equally with the only variance being the mass of the objects being pulled upon, we should be able to identify it just by looking ANYWHERE.
