We have many hard cheeses similar to cheddar here; gloucester, leicester etc. but they're not cheddar because they're made elsewhere with variations in the milk and ageing process.
However yanks decided all English-style hard cheeses should be called cheddar, because you can't pronounce words like "Gloucester", "Leicester" etc. and coined a phrase "cheddaring" for the process of making cheese in the English style, which has gone on to mean all cheeses in that style can be called "cheddar" instead of it having a protected regional status like other European cheeses.

Cabot clothbound is probably the flagship for American cheddars. They wrap it in cloth and cave age it. In terms of a truly American cheese that’s probably the closest we come to achieving it. Most of our cheeses are immigrations of European cheeses and while they can be very good they aren’t original. Rogue creamery in Oregon became famous for their blue which they wrap in local grape leaves and wash with brandy and some years it’s very good, the sweetness of the brandy balancing the strong blue flavor, but it’s declined in recent years. The Cheese culture in most of SA is gone (they have no real seasons unless you go deep into the south) so the demand of cheese went to pretty much what ever stuff you put on a burger, pizza or subway sandwich they produce locally by 2-3 large producers. Anything else is a special market that is pretty much 100% covered by imports or super local products.

How convenient, was thinking about ordering some nice stuff.
Anyone know of a good sharp YELLOW cheddar mixed with ale/beer/whiskey? Years ago Pumpkin Head Ale did some cross promotion where they made something called alehouse cheddar and it was delicious. Ever since I haven't been able to find anything as good because all beer/ale cheddars I look for are white cheddar (meh) or have some sort of other shoddy quality like one I ordered that had so much salt it was crusted.

They do, Argies make great provolone and mozzarella, Uruguayans make good parmesan and romano copies for way less money.
Venezuela back in the day made good mozzarella until the italians were expelled with the commie regime, in Mexico the menonnites brought some variants of dutch cheese which we use daily.
The US/EU infighing is for the upper class deli market, the daily normal life one is already covered by locals who learned from euro immigrants.
