The main things Ive read, is many users dont realize when you delete things from your devices, they dont immediately delete from your cloud, also they use a trash bin style of deletion, where when you do delete a file it sits in a folder waiting for a certain time period to actually delete. You can force this to happen individually, but its annoying to do. This is as designed.outside of that is criminal investigation stories where apple absolutely will freeze from modification and snapshot your account when given a warrant to give to the police and feds without you knowing. Also more classically people still dont understand how basic memory allocation works, and when you delete anything off any computer device its just telling the computer it can write over that area when needed. So forensics will first look at unallocated space for things the user deleted. What makes that worse for modern devices is most use SSD drive that make secure deletion (delete plus overwrite) significantly less effective due to how NAND stores in blocks and requires basically all or nothing overwrite. Also wearing is an issue on SSDs that more sophisticated forensics can use to read. With SSDs the best solution is full encryption, throw away keys when want to clear. But these last issues you would have to worry about for making your own "cloud" as well.

Use any linux distro with Full disk encryption on the miniPC. Use veracrypt on any externals you may add for more space. Veracrypt can be configured to auto unlock with keys or passwords stored on the miniPC, which is fine given you secure the mini well. Install nextcloud and setup/configure it in the miniPC. With full disk encryption, skip any shit advice on how to remotely unlock a full encrypted computer, its not worth it. I think kaliOS has a feature, but ive never used it and never got it to work on other distros. Instead just make the zero into an OTG keyboard device (pikvm, zero-hid, etc), that you will use to pass your password to the mini between reboots. Never store the password on the zero, only use it as a remote keyboard, but secure it regardless. This will keep your password in "memory in use" and never on the unencrypted SD card on the zero. The fastest raspi use raspbian or ubuntu server, and configure to be a dedicated VPN server for your network. Here you could make it full disk as well, but youll need to make another unlocking zero device for it or share the one you made somehow. However like the unlocking zeros, the vpn wont be used to store anything other than config files and settings for your other devices so full disk encryption isnt really needed. Configure your router to port forward the VPN correctly if needed. Make config files for device(s) you want to use and add them to your devices. Configure the VPN to also forward traffic so you can maintain internet access when connected, unless your VPN allows split tunneling, in which case you can configure to only VPN nextcloud traffic or not VPN tunnel normal internet traffic. Then when you want to use your cloud, you click your vpn on.
