Redpill me on olives. Why do they not sell them unprocessed anywhere? Why do they not want us to have them?

Same for potatoes. Why don't they let us eat unprocessed potatoes?

there used to be a tiny hole in the wall italian restaurant across the street from me that cured their own olives and put them in everything. best pizza ive ever had in my life. it closed down when the wife of the owner ran off with the cook

For this reason, they are unsellable to the public.The olives for conservation are collected by hand from the tree. Unprocessed they are very bitter and basically inedible. That’s why we mostly directly sell them to the company that process them. But it’s not true we don’t sell them to the public. We have several customers that make their own conserved olives, all locals from my region.
