Tablespoon salt
1/2 teaspoon yeast

Spend five ,minutes mixing up in a large bowl, cover, and leave overnight until some time the next day.

I preheat a cast iron Dutch oven at 420 degrees (F, you faggots), spend one minute forming the risen dough back into a ball (avoiding pushing out as much gas as possible), plop it in the Dutch oven ater its heated and after I put a generous dusting of flour on the bottom of the Dutch oven to prevent sticking, and then cook 30 minutes covered, and the. 30 minutes uncovered.

For like 10 minutes total of effort you get superb tasting bread.

I use my stand mixer, so now folding the fucking thing every two hours. Just some coil folds after bulk ferment. I also make my own pasta. It's only slightly cheaper than the store bought, but it's a billion times better. I can go from eggs and dough to pasta sheets/noodles in under 45 mins, and 30 of that is the dough resting.

Probably. I do know I thought I fucked my starter up somehow when I first made it, so I ended up dumping most of it out and adding fresh flour and water. It was fine. Pretty sure as long as at least some of the culture is present, it will be fine. You also don't really need to use ratios to feed it, but it does help for consistency of the starter. I usually use 1/2 cup water to half cup flour. I also don't do any of this bullshit where I need special flour and special water. I use shitty Kroger AP flour and shitty city water, and it works just fine.
