I think there are many more monuments buried deep down and these things are just the stuff that was near the top. The Sphinx was nearly forgotten about before some European dudes dug the body up. The shape, size, and position of the pyramids were well-suited to remaining visible despite environmental circumstances. It's just the stuff that could not be missed.
