Pipelines cost millions to build and maintain, tanker trucks/trains are a nightmare to move through the desert due to sand getting into everything, and even if you manage to get it to the Red Sea, you still gotta deal with the Houthis in Yemen, which is why Iran is supporting them to strategically choke 2 of the 3 available exits. Pipelines and roads require maintenance, a lot of that peninsula is extremely harsh desert and rocky territory on the western side.
These areas are also vulnerable to attacks and disasters, add the far more limited capacity you're restricted to carrying compared to the water ways and it becomes very challenging and costly to do that.

There's a reason why water ways are considered vital trade arteries, they require no maintenance, you can carry way more stuff and outside of a giganuke or a mess of mines, they typically remain available after war.

The specific problem is that iran is also opposed to saudi arabia and wants to make Iraq their bitch due to both being shiites which would give them control over most of this oil. As long as the iranians have an anti-saudi bent and want to reach over and grab control of the oil they will be a threat, the straight of homos doesn't even matter that much compared to this specific goal of theirs, and israel is able to then exploit the confluence of the oil interest and the evangelical and pro-israel lobbies in the US for their benefit.
