The orange coating is urethane foam insulation. It turns orange after a while. It’s to stop the liquid hydrogen heating up. If it does it will begin to boil and threaten the rocket tank integrity.

Earlier rockets like the Apollo Saturn V. Used a Kerosene and liquid-oxygen mix. The kerosene didn’t need to be cooled. And the liquid oxygen had internal insulation. This causes the ice buildup the outside of the liquid oxygen tank on the Saturn V falling away you can see on launch.
