You can, but using stone basically triples your construction costs, and you have to hire actual masons rather than just any mexican outside home depot.
Brick I think also calls for specialized architectural plans since it can collapse in strange ways and you have to build around that. Plus it requires maintenance sooner than stone and more expensive than wood/drywall.

Where I'm from, the soil is great for growing, but awful for building due to the high content of clay. Foundation repair is a big business here, because the soil shrinks when dry and expands when wet, causing homes to sink. It's only made worse by the huge swings in precipitation. Wood is cheap and the supply of wood and wood products like paper is effectively infinite in the USA. Recycling paper is optional (ALWAYS RECYCLE ALUMINUM IF YOU CAN - cast iron is the best shit to cook with, don't even clean that bitch).
Stone is a bitch to haul and build with, but tearing it down? FUCK. And to put in new plumbing/hvac/wiring in a stone building you have to tear it down. The modus operandi with American buildings is that they're either historical monuments or totally disposable. Your modern house it built to last what? 20 years? Then it needs extensive retrofitting by design, or becomes a tear-down. That's not building generational wealth in my opinion.
There's buildings with illustriously carved ceilings that get the popcorn shit because someone wants a wire somewhere (I have a relevant picture somewhere). Not really, what they don't tell you is that in Europe most of the stone buildings are there because their foundations would remain after fires. You find the most stine houses on the border where war was common. They would leave their houses and eventually come back after the war and build on the same stone foundation. Their are old quarries all around the united states that were shutdown during the early 20th century because of environmental concerns. But here you can buy prefab houses that are actually quality made and the cheapness simply comes from being able to prefab modules in a factory which is faster and more efficient
The most you win is in labor that is expensive, prefabs are much faster than the old way
