The actual reason is that Ukraine didn't want to be a part of Russia's economic zone / sphere of influence and tried to align with the EU instead.
Russia blamed mostly NATO about the war however because they wanted to pressure the United States to leave European security architecture so they could more easily regain the other former soviet republics as well.
As to the reason why Russia is so adamant about reclaiming their old soviet sphere including Ukraine, it probably has mostly to do with how Putin and his entourage see themselves as successors of the Soviet leaders and want to undo the collapse of the Soviet Union, at least in terms of territory. Soviet-revanchist boomerism of sorts, in other words.
Was it necessary for Russia to invade? Yes and no, depending on whether you speak about the Russian state or the Russian imperial project.
The Russian state itself had no pressing need to attack; it could have easily accepted the post-dissolution borders of Europe and facilitated mutually beneficial trade, but the Russian leadership chose to go for the imperial project of USSR 2.0 instead because the strategic culture which Russia inherited from the Soviet Union encourages such thinking.

The Russians have made plenty of claims about the reasons for the war, there is some truth to many of them while some are made specifically for a certain target audience.
Before 2014 Russia had been building relations with Western Europe and there was a general understanding (not public of course) between Russia and Western Europe that the United States would eventually pull out of Europe and then Russia would more or less be "given" back its old soviet sphere by Western Europe.
NATO membership for Ukraine would have require unanimous support from NATO countries and Western Europe based on the aforementioned understanding with Russia would have blocked it, as you cited the French and German leaders said, hence I don't consider it a credible scenario; too many people in both Europe and in the US considered Ukraine's NATO ascension unwise. Even Kissinger advocated against it.
Which of course raises another question, why would NATO membership for Ukraine be a threat to the Russian state? It wouldn't be, but it would be a threat to the Russian imperial project since acquiring Ukraine back to their own sphere would be much harder if it were a NATO member.

So now you have Russian armies going deep into Ukraine, approaching Kiev even... so why not take the capital as well? And why not link up with the Moldova rebels also?
So now original occupation of small border territory has become invasion of most of the country.
