It's a well-documented fact of history that spices were incredibly expensive and rare in Europe. That's why whites only like parsley, sage, rosemary and thyme. If I had to pick my favorite of those four, it would by thyme and sage. But an underrated White Spice is mustard. Mustard is an unsung hero of white cuisine.

For basically all of history before the 20th century, whites loved spices. Even as far back as Rome, they used exotic spices like "long pepper" and asafetida. Later, the trade in spices was one of the main economic factors behind European imperialism during the early modern era.
