Increasingly it has to do with a kind of logical coherence, and "narrative stability." For one thing it's too expensive and technologically infeasible to run these video generators for a long time, so any video that is too long or that has few cuts is less likely to be AI. (Cuts can mean they stitched together multiple short videos.) But for the tough cases, you need to fall back on world knowledge and common sense to get a feel for whether the video is authentic. Something is usually "off" in the AI videos in a vague way, if you're paying attention. Of course this does not explain the false negatives when you aren't paying attention and get tricked when scrolling etc
